Body: The spirit is both muscular, smoky and intriguingly sensuous; This is the most heavily peated malt in the world, yet the sweet notes of the Sauternes calms the giant and gives a flavour & texture that blows your senses into a place never before experienced.
Nose & Palate: Your expectations of a brutal smoke induced monster are shattered. This is the sexiest spirit ever created; The intense smokiness has been seduced by the sophistication of the Sauternes grape. It should not be possible to calm the beast but it has and the result is absolutely amazing. It opens on a heat haze of peat fires and sweet oak, bog myrtle, Heather flowers, wild thyme and then the beauty that is this Chateau, emerging with style & grace totally blowing your senses apart. The sweetness of the greatest Sauternes in the world totally seduces the giant and the result is amazing. The smoke and marine notes pay homage to the cask and it’s a case of spiritual seduction as the beast is transformed into a gentle giant. Now the aromatics & flavours emerge with hints of wild flowers and plants from the peat fields - Heather, primrose, buttercup, wild Lilies turning in harmony with the intensity of the Sauternes sweetness. It’s only when you taste the spirit that your senses go into a hedonistic aromatic trance; Plums, soft green grapes mingle with a slipstream of cooling marine sea breezes, French oak, peat smoke, sweet barley all created by the super slow distillation and maturation on the West Coast of Islay where the air is pure and the casks breath in the salt laden air.
Without doubt, this is one of my cherished children and in 55 years of distilling this beautiful spirit has made my spiritual journey complete.

It’s a potent seductive unbelievable experience. The focus is clearly the coming together of two exceptional creations. I could write notes for hours on this spirit!

.Nose: Initially the nose is sea spray and caramel, lemon balm and pipe tobacco. Slowly the peat smoke rises from the glass gentle but strong lifting vanilla, mint, toffee, golden syrup and almond. Peach follows with pear syrup and and buttercup. A symphony, a delight to experience.
Palate: Wow! Smoothness, sweetness and then smoke. A texture like no other. Satin soft and devilishly warming. The American oak influence is in perfect tune with the smoke and soft fruits delicately and skilfully coaxed from the Still during exceptionally slow distillation. Vanilla, honey and citrus rise up to be met with sea spray and leather, smoked mussels mix with Autumn bracken and creme brûlée.Finish: As the sweetness from the oak fades the salt comes to the fore one last time while the peat smoke steady and true grows and outlasts all else!
Mood: The feeling is that of long Summer nights turning cooler and shorter as Autumn approaches. Watch the sun set over the sea and breath the peat smoke hanging in the air.
